The Italian word minestrone means big soup, and countless variations of onion, tomato soup are big in Indian kitchens. Here is the recipe.
Chicken Seasoning Cubes
Cut the boneless chicken into very small cubes, and fine chop all the vegetables except tomatoes
To blanch the tomatoes, put in boiling water for 3-4 min. Remove from water & peel them to remove the skin. Chop very finely & keep aside.
Heat oil and add onion & garlic. Stir fry till it turns golden brown.
Add chicken and stir fry for 3-4mins
Add 5 cups water & chicken seasoning cubes. Give one boil. Post one boil, lower the flame, cover & simmer for 10mins
Add tomato puree & basil leaves. Simmer for 2-3mins
Add salt, pepper & oregano. Mix well.
At the time of serving, garnish with cheddar cheese.
