It's Been today, a festival in India where women dress up in traditional Indian attire & do Teej puja. And, as a tradition I made this halwa in the morning for my family.
Take a kadhai and keep on low flame. Add the ghee and let it heat up for a while. In the meantime, take sugar and water in another pan. Keep on high flame. Back to kadhai, once the ghee becomes hot, add sooji & cashews and stir continuously so that it does not stick to the pan and is roasted evenly. After that add maida & keep stirring.
Simultaneously wait for the sugar solution to come to a boil. If it comes to boil, then lower the flame and let it simmer. Keep stirring the sooji for 7-8 min till it changes color and cashews change to a light golden color.
Add crushed cardamom & raisins
Stir and then add hot sugar solution slowly. Keep stirring
Stir till the mixture becomes a bit thick
Garnish it with Almonds & raisins
